This red wine from Cantina Giustini is made from pure Primitivo di Manduria grapes, sourced from the vineyards of San Giorgio Ionico, Taranto: these vineyards are planted on ancient soils and deep roots in the heart of the Primitivo di Manduria DOC. The harvest takes place in the first ten days of September, followed by destemming and pressing, with a maceration period of approximately 15 days. Once alcoholic fermentation has taken place at a controlled temperature of 24-26°C, the final aging phase is reached, which takes place entirely in French oak barriques for 6 months.
Characteristics of this Salento wine
It has a very deep ruby red color. The olfactory notes are striking for echoes of blackberry, locust bean, licorice, and tobacco. On the palate it is enveloping, dry, tannic and with a long finish.
