This Extra Brut Metodo Classico Sparkling Wine from the Due Palme winery in Puglia is made from 100% Negroamaro grapes grown on calcareous clay-loam soils with a good amount of gravel. Following manual harvesting, the grapes are cooled and then pressed to obtain the free-run juice. This is followed by temperature-controlled alcoholic fermentation, bottling and secondary fermentation in the bottle with ageing on the lees for 24 months. The final ageing process takes place in the bottle for a minimum of 3 months.
Characteristics of this sparkling wine
It has a very bright straw yellow colour and a fine mousse. The bouquet is reminiscent of yellow-fleshed fruit, citrus fruits and floral notes of orange blossom, acacia and broom. The palate is also citrusy, with a pleasant creaminess and excellent persistence.
Recommended pairings with this Extra Brut sparkling wine
Excellent with risottos and fish dishes, tartare, sushi and sashimi, and raw seafood in general. Serve at a temperature of 6-8°C.
