This white wine from Cantina Giustini is part of the DESIGN line, wines that can best express the size of native grapes without neglecting a touch of style. For the production of this ILLUMINATO, Fiano grapes from the vineyards of San Giorgio Ionico, Taranto, with an average age of 25-30 years and on medium-textured soils with a good presence of clay, are used. The bunches are collected during the first ten days of September: this is followed by destemming and soft pressing, without maceration. Alcoholic fermentation takes place in steel at a temperature of 16°C, final refinement also in steel.
Characteristics of this Salento wine
It has a shiny straw yellow color. The olfactory notes recall aromatic herbs, minelaying and floral notes. Elegant on the palate, with a slightly savoury finish.
