When the Piedmontese tradition of the classical method meets the peculiarity of the Alta Langa grapes comes TOTOCORDE from Cocchi Winery: a cuvée of Pinot Noir and Chardonnay grapes of absolute quality, hand-picked during the harvest. After an initial delicate pressing phase, the first steel fermentation takes place for three weeks, after which the wine is stored in the cold to allow the deposits to settle. At the end of winter, the cuvée is created by combining Pinot Noir and Chardonnay from the same harvest: the foam is collected in a bottle and is completed with long maturation for 4 years, in a cool, dark place.
Characteristics of this COCCI TOTOCHORDE
It has an effervescent perlage and a very delicate straw yellow color; the olfactory fan is broad and complex, with references to fruit, citrus fruits first and foremost. Rich on the palate with the same citrusy notes of smell.
Recommended pairings with this Piedmont wine
Excellent with fishy dishes such as seafood risotto, steamed appetizers, fried foods, and sushi. Perfect with charcuterie and cheese boards. Serve at 8-10°C.
