This Saten CARPE DIEM from Cantina Bonfadini is made from pure Chardonnay grapes, sourced from glacial moraine soils in the hilly area and from vineyards with an average age of 10 years. The harvest takes place manually during the first and second decades of August. The grapes are then subjected to soft pressing, followed by first fermentation in steel at a temperature of 14-16°C. Part of the Chardonnay ferments and ages in French oak barriques for a period of 7 months. The second fermentation takes place in the bottle, according to the Classic Method: a maximum controlled pressure of 5 bars is maintained in such a way as to obtain a creamy and velvety foam. Final aging in bottle for 24 months.
Features of this Saten by Bonfadini
It has a straw yellow color and an olfactory profile reminiscent of fruit and vanilla. On the palate it is persistent pleasantly creamy.

Excellent with aperitifs, fish dishes such as sushi, steamed appetizers, fried foods, squid ink linguine but also vegetable dishes. Serve at 6-8°C.
