Founded in 1991 on the occasion of the centenary of the company's foundation, this PRIMOSECOLO from the Piedmontese Cocchi Winery was born from the use of pure Chardonnay grapes. Following manual harvesting, the first alcoholic fermentation takes place in steel vats for almost 3 weeks, after which the wine is cooled to facilitate the deposition of the yeasts. The froth setting takes place in an autoclave where this sparkling wine rests for 6 months on the yeasts, before completing the maturation in the bottle.
Characteristics of this PRIMOSECOLO sparkling wine
It has a very delicate straw yellow color with a fine, persistent perlage. The olfactory notes recall notes of white flowers and bread crust. On the palate it is soft but characterful, with a pleasant freshness.
