This Extra Brut Classic Method wine from the Piedmontese Winery Marziano Abbona is made from a blend of Pinot Noir and Chardonnay grapes: the vines are around 20 years old, which is why they produce bunches with a concentration suitable for the Classic Method. The free-run juice is obtained from the soft pressing of the grapes, followed by static clarification and the start of alcoholic fermentation. This is followed by several months of racking and ageing, and finally tirage with the aid of selected yeasts and refermentation in the bottle, as per the Metodo Classico, for 40-60 days.
Characteristics of this Classic Method
It has a straw yellow colour and a fine perlage. The bouquet is reminiscent of yeast and hazelnut, while the palate is fresh, elegant and with a good acidity.
Recommended pairings with this Piedmont wine
Perfect as an aperitif, to accompany cold cuts and cheeses, but also with vegetable flans, white meats and fish dishes. Serve at a temperature of 8°C.
