From a blend of Corvina Veronese, Corvinone and Rondinella grapes comes this Veneto red wine from Monte del Frà Winery. It is a wine that co,es from the Valpolicella Classica area, on hills situated at 250-450 m above sea level and benefiting from clay and limestone soils. Following the harvest, which takes place in October, the drying process already started on the vine continues in temperature-controlled boxes. Maceration takes place for about 120 days, until optimal sugar concentration is reached. This is followed by soft crushing and alcoholic fermentation in steel vats with a long maceration on the skins to extract all the aromatic and polyphenolic components. Once malolactic fermentation is complete, the wine rests in wooden barrels for 24 months, then bottled and it is in the bottle that the ageing process ends with a further 6 months.
Characteristics of this Veneto wine
It presents a very intense ruby red colour with deeper reflections. The olfactory profile is complex with notes reminiscent of cherry, plum, liquorice and spices. The palate is pleasantly enveloping and intense, with excellent persistence.
