This Salento rosé wine from Cantina Due Palme is made from pure Susumaniello grapes grown on the loamy-clay soils of the province of Brindisi. The grapes are harvested manually in order to preserve their quality and varietal characteristics. This is followed by hyperoxygenation, i.e. the introduction of a certain amount of pure oxygen into the must prior to fermentation, with the aim of accentuating the characteristic colour of this wine. Fermentation involves continuous pumping over to enhance the aroma. The final stage of ageing takes place in the bottle.
Characteristics of this Salento rosé wine
It has a very intense pink colour with light purple reflections. The nose is intoxicated by olfactory notes of small red fruits and fresh flowers. On the palate, it is citrusy with a long finish.
Recommended pairings with this rosé wine from Puglia
Particularly suitable with light fish dishes such as steamed appetisers or seafood salads. Serve at a temperature of 10-12°C.
