The Carignano del Sulcis DOC “Grotta Rossa” from the Santadi Winery is made from Carignano grapes grown in the lower Sulcis area on clay, sandy and calcareous soils, with vineyards raised on saplings and espaliers. The collection is manual and takes place between September and October. Fermentation takes place in stainless steel tanks at a controlled temperature for about fifteen days, with maceration on the skins and frequent reassembling to promote the extraction of aromatic and polyphenolic substances. The wine then ripens for a few months in concrete tanks before bottling.
Characteristics of this Sardinian wine
In the glass it has a deep ruby red color. Fruity aromas of blackberry and small red fruits emerge on the nose, accompanied by light spicy notes and a licorice finish. In the mouth it is elegant, soft and enveloping, with good structure and pleasant balance.
