The Tramin Winery produces this amazing wine. The name STOAN comes from the German “Stein” which means stone and it underlines the conformation of the cultivation soil. This wine is produced with the best grapes of the Trentino Alto Adige. They give a sensational aroma with unique scents, fresh and very penetrating. According to the Tramin tradition the white Stoan DOC is honored by the Südtirol-Alto Adige DOC certification. This wine is made by Chardonnay, Sauvignon, Pinot Bianco and Gewürztraminer. All the vines are cultivated on pebbly, calcareous and mineral soils at Termeno at 400 and 550 meter above the sea level. Here the vines are ventilated. The profit is very low at 50 hectoliters per hectare. There is a soft pressing of the grapes that lately has to mature in wood barrels at 18-20°C. The malolactic fermentation takes place naturally in wood barrels until the half of may when it takes place the bottling.
Characteristics of the Stoan DOC
It can be aged until 10 years. It has a light straw yellow color with green reflections quite transparent. It has an intense aroma, clean and pleasant, elegant and refined. There are some peach and elder aromas followed by pineapple, banana and pear flavors with some hints of tomato and green pepper leafs. The taste is fresh, soft with a great balance, intense tastes and pleasant fruity aromas.
Suggested pairings with the Stoan DOC
The Stoan DOC is perfect with starters with herbs or vegetables creams. It is perfect also with fish, seafood or with white meats. It has to be served at 12°-14°C in tulip wine glasses to concentrate the scents in the nose.
