“Dei Siori” is an organic red wine from the Fasoli Gino winery that was born from the idea of recounting the tradition and elegance of ancient Veronese families. The name derives from a Venetian dialect expression and recalls the history, culture and identity of the area. It is a blend of Pinot Noir and Merlot, sourced from hilly vineyards in the Illasi Valley, grown organically and in low yields. The harvest is manual and takes place at different times: Pinot Noir is harvested in mid-August, while Merlot is harvested in the first fifteen days of September. The grapes are vinified separately in temperature-controlled steel tanks to preserve aromas and finesse. The aging then takes place in second and third pass tonneaux for approximately 24 months, giving the wine complexity and balance without covering the varietal identity.
Characteristics of this wine from the Veneto
On organoleptic examination it appears with a clear and bright ruby red colour. The bouquet is elegant and delicate, with notes of plum, purple and small red fruits, accompanied by undergrowth nuances and light wood roasts, never invasive. On the palate it is soft, velvety and harmonious, with fine tannins, good freshness and a long, elegant finish with a slight mineral note.

It pairs perfectly with traditional Veronese dishes such as tripe, polenta, and soppressa, but also with braised meats, red meats, game, and aged cheeses. Its balanced structure makes it versatile with tasty but not overly heavy dishes. The recommended service temperature is 18–20 °C.
