Ripasso della Valpolicella DOC Corte del Pozzo is produced with Corvina, Corvinone and Rondinella grapes grown on the hills of Valpolicella, on clayey and calcareous soils raised with short Veronese pergola. The harvest is carried out manually between the end of September and the beginning of October. After an initial fermentation, towards the end of February the wine is left to rest on the Amarone pomace for about fifteen days; during this phase, dried grapes are also added to increase structure and aromatic complexity. The wine then ripens in oak barrels for a period of 16-24 months and completes the aging process with an additional six months in the bottle.
Characteristics of this wine from the Veneto
It appears with a bright, intense ruby red color. On the nose emerge scents of cherry in spirit, undergrowth fruits and light vanilla notes. On the palate, the wine is soft and velvety, with hints of red fruit, good structure and a long, persistent aftertaste. The alcohol content is 14.5% vol. and the recommended serving temperature is between 15 and 18 °C.
