The “Il Brutto” Asolo Prosecco Superiore DOCG Sui Lieviti is made from Glera grapes from the hills of the Asolo DOCG area. After soft pressing of the grapes, the flowering must ferments in steel at a controlled temperature. The base wine is left to age on the lees for at least six months until early spring, when it is bottled to begin refermentation in the bottle. The process takes place without disgorging, that is, without removing the yeasts, which naturally remain in suspension or at the bottom of the bottle. This traditional method gives the wine its character “with the bottom”, slightly veiled and more rustic than classic Prosecco, with a very low sugar residue and an essential and authentic profile.
Characteristics of this Prosecco di Montelvini
It has a straw yellow colour veiled due to the presence of yeasts. Perlage is fine and continuous. On the nose it expresses scents of white flowers and light-fleshed fruit, accompanied by notes of bread crust, yeast and light citrus nuances. On the palate it is dry, fresh and savoury, with a fuller structure than traditional Prosecco and a pleasant rustic component given by refermentation in the bottle. The finish is dry, slightly bitter and very characteristic.
Recommended pairings with this DOCG Prosecco
It pairs very well with tasty appetizers, cured meats, smoked fish and fresh cheeses. It is also suitable for light frying and casual cooking dishes, thanks to its freshness and ability to cleanse the palate. Serve at 8-10°C.
