Prosecco DOC Treviso Brut is made from Glera grapes grown in the Treviso area, in areas particularly suited to the production of fresh and elegant sparkling wines. After harvesting, the grapes are subjected to soft pressing and the must is clarified by cold static decantation. Primary fermentation takes place in steel at a controlled temperature of approximately 18–19 °C with selected yeasts. The wine then remains on its lees for approximately three months before being frosted in an autoclave according to the Martinotti-Charmat Method. After bottling it rests for a further 4–6 weeks before marketing.
Characteristics of this wine from Montelvini
It has a bright straw yellow color and a fine, delicately persistent perlage. Fresh, fragrant scents of crisp Golden apple, pear, and white flowers emerge on the nose, accompanied by light floral notes of acacia and wisteria. On the palate it is fresh, harmonious and flowing, with a pleasant acidity that enhances its drinkability and aromatic component. The finish is clean, lively and delicately fruity.
Recommended pairings with this Prosecco DOC Brut
It pairs very well with light appetizers, finger food, fish and white meats. It is also ideal as an aperitif and in the preparation of cocktails thanks to its freshness and gastronomic versatility. Serve at 6-8°C.
