The Festa Norìa della Cantina Santadi is a fortified red wine made from native red grapes grown in the lower Sulcis area, on sandy and calcareous-clayey soils, often from sapling vineyards still free-standing. Harvesting is manual and takes place between late September and mid-October: the grapes are subjected to a long drying process on the plant and harvesting takes place in several phases, harvesting only the bunches that have reached optimal ripeness. The grapes are then vinified with a temperature-controlled red fermentation: when about 2/3 of the residual sugars have been consumed, the wine is cooled to block fermentation. Wine alcohol is added to obtain a fortified wine with a significant sugar residue: the final aging phase takes place in oak barriques for several years, followed by bottling.
Characteristics of this Sardinian wine
From an organoleptic point of view it has an amber colour with garnet reflections. On the nose it is intense and balsamic, with notes of cinnamon, nutmeg and typical scents of the Mediterranean scrub such as myrtle and juniper. In the mouth it is warm, enveloping and very persistent, typical meditation wine.
Recommended pairings with this wine from Cantina Santadi
It is ideal with traditional Sardinian dry pastries such as amaretti and sospiri, but also with sweets made with almonds, honey and dried fruit. It pairs well with more complex desserts such as dark jam tarts, dark chocolate desserts and spicy preparations. Also excellent when paired by contrast with blue or very aged cheeses, where the savouriness of the cheese is balanced by the sweetness and softness of the wine. In general, it is an end-of-meal or meditation wine, designed to be enjoyed slowly even on its own. Serve at 18°C.
