Asolo Prosecco Superiore DOCG Extra Brut is made from Glera grapes grown in the hilly area of DOCG Asolo, between Montello and the Colli Asolani. Harvesting is done manually with careful selection of bunches. After soft pressing, the flower must is obtained and processed at low temperatures to preserve its natural aromaticity. This is followed by a controlled fermentation in steel and the subsequent setting of foam using the Charmat Method, during which oxygen and temperature are carefully managed to keep the aromatic precursors intact. The result is a sparkling wine with a very low sugar residue, which maximizes the minerality and flavor of the area.
Characteristics of this Prosecco di Montelvini
It has a straw yellow color with greenish reflections and a fine, persistent perlage. On the nose it expresses a broad and fruity profile, with notes of apple, pear and white flowers, accompanied by a slight minerality. On the palate it is dry, fresh and very balanced, with a marked flavour and a tighter structure than the Brut and Extra Dry versions. The finish is clean, vertical and characterized by a pleasant mineral sensation.
