This fresh and particularly drinkable white wine is made from pure Insolia grapes from the vineyards of Partinico: this Insolia from the Cusumano Sicilian Winery is part of the line dedicated to the most famous grape varieties traditionally grown on the island. At the end of the harvest, the bunches are subjected to cold maceration for 8 hours at a temperature of 8°C, which precedes soft pressing. After cold static decantation, steel fermentation is continued at a controlled temperature of 18-20°C. Before being bottled, this Sicilian white wine matures in steel on fine lees for a few months.

It has a bright straw yellow color and an intoxicating scent of citrus, apple, zagara flowers and aromatic herbs. On the palate it is fresh, savoury and drinkable.
