L’“Araja” Valli di Porto Pino IGT della Cantina Santadi is born from Carignano grapes and a small percentage of Sangiovese, grown in the coastal areas of Sulcis on sandy soils rich in granite decay. The harvest is manual and takes place between early September and mid-October. Fermentation takes place in stainless steel tanks at a controlled temperature for about fifteen days, with maceration on the skins and frequent reassembling to promote the extraction of aromatic and polyphenolic substances. The wine then continues to mature in concrete tanks and partly in French oak barriques before bottling.
