Directly from the classic zone in Valpolicella classica, on hills 350-400 m above sea level, comes this Veneto red wine from the Monte del Frà Winery; the vineyards benefit from strong temperature fluctuations and volcanic soil, leading to the production of grapes with a particularly strong character. The grapes used for the production of this Veneto wine are a blend of Corvina Veronese, Corvinone and Rondinella, harvested in October following a brief drying period on the vine; the drying process then continues in temperature-controlled crates for about 120 days until the optimum sugar concentration is reached. This is followed by soft crushing and alcoholic fermentation in steel, with a long maceration on the skins in order to extract all the aromatic and polyphenolic components. The wine is then placed in wooden barrels for malolactic fermentation. After racking, it is aged for 90% in 30 hl barrels for 36 months and the remainder in small barrels. Once bottled, this Amarone della Valpolicella Classico Riserva is further refined in the bottle for a further 12 months.
Characteristics of this Veneto wine
It presents a very intense ruby red colour with deeper reflections. The olfactory bouquet is an explosion of yellow fruit, berries, liquorice, tobacco and spices. On the palate it is enveloping and with a dense tannic texture.
Recommended pairings with this Veneto red wine
Excellent with game dishes, red meats and aged cheeses. Serve at a temperature of 18°C after decanting.
