Passito Terre Siciliane IGT BIO Êra is made from Moscato grapes from both historic vineyards in the Val di Noto and the highland vineyards of Santa Cristina Gela, up to 750 metres above sea level. The grapes are subjected to natural wilting in the vineyard and harvested manually with careful selection of bunches. After a cryomaceration phase to preserve freshness and aromatic complexity, the wine ages in French oak barriques and tonneau. Subsequently, small portions of wines from historic vintages are also assembled, creating a harmonious, deep and elegant passito.
Characteristics of this Sicilian wine
It has a deep golden yellow color. On the nose it expresses a large and complex bouquet, with notes of candied citrus, bergamot, cedar, honey, candied fruit and references to the Mediterranean scrub, accompanied by elegant mineral and marine nuances. On the palate it is soft, silky and enveloping, with a well-balanced sweetness and a pleasant freshness and flavour. The ending is long, elegant and slightly bitter.
Recommended pairings with this sweet passito
Êra Passito pairs perfectly with Sicilian pastries, almond-based desserts, dried fruit, and spoon desserts. Also excellent with dark chocolate, foie gras and blue or aged cheeses. Thanks to its freshness it can also accompany moments of meditation at the end of the meal. The ideal service temperature is between 10 and 12 °C.
