This wine from Cantina Bottega is born from a blend of Glera, Chardonnay and Pinot grapes, grown in the Venice DOC area, between the provinces of Treviso and Venice. The grapes are generally harvested in mid-September and quickly transported to the cellar to preserve the aromatic quality. After destemming and soft pressing, the must is clarified by natural decantation. The first fermentation takes place in stainless steel at a controlled temperature with selected yeasts, so as to keep the varietal scents intact. The second fermentation takes place in an autoclave at about 14 °C, according to the Charmat method. At this stage the sugars are transformed into alcohol and the carbon dioxide that gives rise to the foam naturally develops. The wine is then cold stabilized, filtered, and finally bottled under isobaric conditions to maintain the pressure and fineness of the perlage.

On organoleptic examination, the White Gold presents with a straw yellow color enriched with golden reflections and a fine, persistent perlage. The bouquet is elegant and complex, with fruity notes of apple and peach, delicate floral notes such as hawthorn and a slightly honeyed and dried fruit closure. On the palate it is soft and harmonious, with a well-defined balance between the freshness of the Glera, the structure of the Chardonnay and the acidic component of the Pinot, which contribute to a balanced and flowing taste profile.
