Viognier Sicilia DOC BIO is made from pure Viognier grapes grown organically in the highland vineyards of Santa Cristina Gela, approximately 650–750 metres above sea level. The soils are medium-textured with a clay component and rich in minerals, while the strong temperature variations favor the aromatic development of the grapes. Harvesting is manual and often occurs in multiple steps to select different levels of ripeness. After soft pressing, fermentation takes place in temperature-controlled steel. The wine then ages on steel yeasts for a few months and then in bottle, preserving freshness and aromatic complexity.
Characteristics of this Sicilian wine
It has a bright straw yellow color with golden or greenish reflections. On the nose it expresses an intense and fine bouquet, with notes of white flowers such as acacia and jasmine, hints of peach, apricot and yellow-fleshed fruit, sometimes enriched with tropical and citrus nuances. In some versions, balsamic and mineral hints linked to the highland terroir also emerge. On the palate it is soft and enveloping, but supported by a good freshness and flavour, with a long and fruity finish.
Recommended pairings with this Sicilian white wine
It pairs very well with fish, shellfish and shellfish dishes, but also with sushi and Asian cuisine. It is excellent with seafood appetizers, light first courses, vegetables, fresh cheeses and goats, thanks to its aromaticity and good structure.Serve at a temperature of 10-12°C in a tapered glass.
