This Monferrato Rosso Talin from Cantina Agostino Pavia was born from a blend of Barbera and Syrah. The vineyards are located in the municipality of Agliano Terme and are the true protagonists of the process that leads to the birth of these Piedmontese wines, a true expression of the terroir that can then be found in the glass. The vinification of this red wine requires maceration with the pomace for 15-18 days with frequent reassemblies. This is followed by alcoholic fermentation at 25-28°C and malolactic fermentation by December. The refinement takes place in 500 lt tonneaux from Allier and Fontainebleau for 12-14 months. Once assembled in stainless steel and bottled in May, the wine ripens for another 6 months in the bottle.
Characteristics of this Piedmont wine
It has a rich ruby red color with purple highlights. The olfactory notes are very intense, fresh and fruity, with hints of purple and mint. On the palate it is well balanced, long and persistent, with hints of jam and vanilla.
