Prosecco DOC Brut Gold from Cantina Bottega is a wine produced according to the Martinotti-Charmat method, using a blend of Glera, Chardonnay and Pinot grapes from the hilly areas of the province of Treviso. The vineyard develops in an area characterized by strong temperature variations between day and night and highly variable soils, factors that contribute to the development of fine and elegant aromas. The production process involves a harvest that takes place from mid-September, with the grapes harvested and quickly delivered to the cellar to avoid oxidation and preserve the aromatic quality. The grapes are subjected to soft pressing, so as to extract only the noblest fraction of the must. Clarification takes place cold in stainless steel and the first fermentation takes place at a controlled temperature, with selected yeasts that transform the sugars into alcohol while maintaining the primary aromatic component intact. The second fermentation takes place in an autoclave, according to the Charmat method, at about 14–15 °C, and lasts on average about 40 days. At this stage, the carbon dioxide that characterizes fine and persistent perlage naturally develops. At the end of fermentation, the wine remains in contact with the inactive yeasts, which through the autolysis process contribute to increasing the complexity, structure and softness of the final product. Stabilization and bottling are then carried out under isobaric conditions to maintain pressure and freshness.
Features of this Prosecco Gold
From an organoleptic point of view it has a bright straw yellow colour and a fine, persistent perlage. On the nose it is elegant and typical, with fruity scents that recall green apple, pear and citrus, accompanied by floral notes of acacia, wisteria and lily of the valley, with a light herbaceous and spicy closure. In the mouth it is soft, harmonious and balanced, with a slim body and a good acidity that supports the drink making it fresh and pleasant.

This Prosecco lends itself very well as an aperitif and is also suitable for making cocktails. At the table, it accompanies light appetizers, delicate first courses such as risottos or pastas made with fish or herbs, second courses of both raw and steamed fish and grilled white meats, as well as vegetable-based dishes. Serve at a temperature of 4-5°C.
