Cabernet Sauvignon di Feudo Arancio originates in the Sambuca di Sicilia area, in the province of Agrigento, where the grape variety finds ideal conditions thanks to slightly clayey soils and good exposure to the sun. It is a late-ripening variety, generally harvested between late September and early October, when the grapes reach full phenolic maturity. After harvesting, the grapes are destemmed and subjected to alcoholic fermentation with maceration on the skins for several days at a controlled temperature around 26 °C, in order to extract color, structure and aromatic complexity. Subsequently, malolactic fermentation takes place with selected bacteria and the wine is aged for approximately 12 months in French oak barriques, a phase that helps integrate its components and enrich its spicy profile.
Characteristics of this Sicilian wine
In the calyx it has a deep, intense purple-red colour. The bouquet is rich and well-defined, with notes of blackcurrant and ripe cherry that blend with spicy and slightly toasted notes resulting from aging in wood. On the palate it stands out for its structure and power, while maintaining a good tannic fineness: the tannins are present but soft and well integrated, contributing to a balanced and enveloping sip. The wine is full, with a consistent taste texture and a persistent finish, characterized by fruity and spicy returns.
Recommended pairings with this red wine from Feudo Arancio
It is a structured red, ideal in combination with grilled red meats, game, cured meats and aged cheeses. Thanks to its body, it also pairs perfectly with important dishes such as braised meats, ossobuco and tasty meat preparations from the Mediterranean tradition. The recommended serving temperature is between 16 and 18 °C, so as to best enhance its structure and aromatic complexity without weighing down the drink.
