Sito dell’ Ulmo is a single-vineyard 100% Merlot. Our experience made us find in those vineyards, planted in 1987 on the river of Lago Arancio, the ideal place for the cultivation of this French grape. The soft pressing is followed by 14 days maceration on skins. After the alcoholic fermentation, managed at 28°, starts the malolactic in steel, while the aging is managed in barriques for 14 months. Half of the barrels, made of Allier oak, is new.

The organoleptic analysis shows a purple red colour with violet shades. Its fruity perfume recalls dark cherry, plum, citrus fruits, carob and liquorice. The taste is characterized by graphite, fresh and compact tannins. Its vivid acidity guarantees a great persistence.

Even if it is fabulous alone, its elegance makes it perfect for white meat dressed with important sauces or with fish accompanied by roasted vegetables. You can drink it immediately or wait 10 years. It has to be served at 16°C, in a high, wide wine glass.
