Controdanza Noto DOC PLANETA

Controdanza comes from “country dance”; it is a traditional rural dance whose protagonists move with elegance in a continuous play of contrasts and agreements. This is what we want to represent with Nero d’ Avola joined to a small percentage of Merlot, cultivated in the white lands of Noto. An unconventional union that expresses contrast and harmony. 85% Nero d’ Avola and 15% Merlot. The wine making considers the soft pressing of the grapes and the elimination of stalks. 14 days maceration are followed by alcoholic fermentation at 25°C. The malolactic fermentation is managed in inox, while the aging, that lasts 10 months, is developed in Barriques of 3rd passage made with Allier oak.

Features of the Controdanza di Noto DOC wine

Deep red colour. Its perfume recalls mulberry, plum and laurel oak, joined to balsamic hints. The taste is characterized by a rich, harmonious acidity next to soft tannins that caress your palate.

It is excellent with grilled meat, especially with pork and lamb. You have to try it with the traditional local dishes. You can drink it young or age it for 8-10 years. It has to be served at 16°C.
