Franz Haas' Müller Thurgau “Sofi” is a South Tyrolean white wine that clearly expresses the characteristics of the grape variety and the mountain territory in which it is born. As for production, the grapes come from vineyards located at altitudes between approximately 500 and 800 meters, where the strong temperature variations favor the development of fine aromas and good acidity. After the harvest, the grapes undergo a short maceration on the skins, useful for intensifying the aromatic complement, followed by a soft pressing. Fermentation takes place in temperature-controlled stainless steel tanks, a choice that allows the freshness and fragrance typical of Müller Thurgau to be preserved. The wine then remains to refine on the fine lees for a few months before being bottled, thus maintaining a young, clean and immediate style.
Characteristics of this South Tyrolean wine
From an organoleptic point of view, it has a bright straw yellow colour. On the nose it offers a delicate yet recognizable bouquet, characterized by notes of fresh fruit such as apple and peach, accompanied by floral notes that recall white flowers. In the mouth it is fresh and light, with a good acidity that supports the drink and gives balance. The savory component helps make the sip dynamic and pleasant, while the finish is clean and harmonious.

This wine is well suited to light and delicate dishes, being particularly suitable with appetizers and first courses based on fish, shellfish and simple preparations of Mediterranean cuisine, as well as fresh cheeses.
