Franz Haas' Pinot Grigio Vigneti delle Dolomiti IGT is a white wine that elegantly expresses the characteristics of the grape variety and the Alpine territory from which it comes. As for production, Pinot Grigio grapes are grown in vineyards located between 300 and 800 meters above sea level, on deep soils rich in clay and limestone of dolomitic origin, with exposures mainly to the south and southwest. After the harvest, the must ferments at a controlled temperature mainly in stainless steel tanks, with a small portion vinified in barriques, a choice that contributes to the wine's greater complexity. Subsequently, the wine ages for about four months on the yeasts, a process that increases structure and roundness without compromising the typical freshness.
Features of this Pinot Grigio
From an organoleptic point of view, the wine has an intense and bright straw yellow colour. On the nose, it develops a broad, floral bouquet, with references to acacia, sage, and hay flowers, accompanied by softer notes of almond and sandalwood, which can evolve towards hints of linden and honey with a brief refinement in the bottle. In the mouth it stands out for its finesse and elegance, with a well-balanced freshness and good structure, supported by a pleasant richness of taste and harmonious persistence.
Recommended pairings with this South Tyrolean wine
As for pairings, this Pinot Grigio lends itself particularly well to delicate dishes such as pasta, rice, and cereal-based first courses, vegetarian dishes, and vegetables, as well as grilled white meats. Its freshness and versatility make it suitable even for light preparations of everyday cooking. The ideal serving temperature is between 12 and 14 °C, so as to best enhance the aromatic profile and fresh component of the wine.
