Droppello Alto IGT Toscana Bianco from Tenuta Fertuna is one of the winery's most unique wines because it is born from a white winemaking of Sangiovese, a red grape variety treated as if it were a white, with the aim of enhancing its new and modern side. The grapes come from a single plot of the Maremma, are harvested by hand and subjected to soft pressing. The wort obtained is then slightly oxidized and left to stand at low temperature in steel for a few days, so as to enrich the aromatic profile. Fermentation takes place at a controlled temperature with selected yeasts and the wine continues its evolution for about twelve months on the fine lees, followed by an aging of about six months in new oak tonneaux, with frequent batonnage that increases its complexity and structure.
Characteristics of this Tuscan wine
On organoleptic examination it appears with an intense and bright straw yellow colour. On the nose it offers an elegant and complex profile, in which floral and fruity notes emerge that recall white and yellow-fleshed fruit, together with citrus nuances and light herbaceous and mineral sensations. With evolution, softer and slightly spicy touches can also appear, given by the passage in wood. On the palate it is a structured wine but at the same time supported by a good freshness and a marked flavour. The sip is broad, velvety and dynamic, with a persistent closure in which the fruity and mineral notes return.

It is particularly suitable with cooked fish appetizers, structured first courses with white toppings, delicately prepared white meats such as stews or grilled meats, and dishes based on seasonal vegetables, such as ratatouille or Mediterranean preparations. Serve at a temperature of 8-10°C.
