Wine description

From the vinification in blend of grape variety of Pinot Noir and Glera. This sensational Extra Dry sparkling wine of great prestige was born.The origin of the grapes is the classic one within the company of Tenuta Astoria on hilly lands at about 150 meters above sea level. The vineyards oriented to the east-west with 3500 vines per hectare; vines with 15 years of age. Average production of 2/3 kg per strain equal to 120/130 quintals per hectare.The harvest takes place manually in September. Vinification involves soft pressing and static decantation of the must. The primary fermentation takes place in steel at 18 º C with selected yeasts autochthonous.The part of red grapes vinified separately and with a short maceration, gives the wine that color and that typical tone, much sought after by "classic" sparkling wines, made of a particular aroma and body. The new wine is kept on the "noble lees" for a month, then filtered and decanted in autoclaves for the foam. The refermentation takes place at 18 C always with selected yeasts and lasts about 20/25 days; followed by 40/50 days of aging on the yeasts, then minimum 60 days in autoclave as per the specification. Then proceed to the bottling and rest in the bottle for a few weeks.

The appearance of this fine sparkling wine is soft pink, with rich, minute and persistent perlage. The bouquet: elegant, fruity, floral and rich. The taste is characteristic, pleasantly dense and balanced.

 

Suggested pairings tasting this product of Astoria winery

An excellent sparkling wine paired with fish, pizza and a rich aperitif. The optimal serving temperature is 6 º C in a tall and tapered glass.
