This red wine from the Paololeo winery in Puglia is part of a line dedicated to native grape varieties capable of producing great wines, thanks to meticulous vinification and ageing in oak barrels. The pure Negroamaro grapes, harvested by hand in the early hours of the morning, are destemmed and then fermented in temperature-controlled steel tanks for about ten days. This is followed by maceration on the skins and final pressing on the pomace. Maturation requires ageing in steel for 3 months, 12 months in barriques and finally 3 months in the bottle.
Characteristics of this Apulian wine
It has a ruby red colour with garnet reflections. The bouquet has spicy notes as well as sweet and candied notes. On the palate, the tannins are delicate and the finish is long and persistent.
Recommended pairings with this Apulian red wine
Try it with elaborate first courses such as lasagne, stuffed cannelloni and parmigiana bakes. Serve at a temperature of 18°C in large glasses.
