Made exclusively from Negroamaro grapes, the most famous of Apulia's native varieties, this red wine from the Paololeo winery in Apulia is part of the Varietali line, wines that are produced using single grape varieties in their most authentic expression. The grapes used come from vineyards in the rural area between San Donaci and Salice Salentino: once harvested manually during the grape harvest, the grapes are then destemmed and fermented in steel for about ten days. Ageing takes place in steel for about 5 months.
Characteristics of this Negroamaro wine
It has a very intense ruby red colour and an aroma reminiscent of ripe red fruit: raspberries, currants and plums, as well as notes of cinnamon and spices. On the palate, it impresses with its well-balanced tannins and a long, spicy finish.
Recommended pairings with this red wine from Puglia
Excellent with particularly structured meat dishes such as braised meats, stews and ragù. Also try it with cold cuts and cheeses. Serve at a temperature of 18°C in large glasses to encourage oxygenation.
