Sagrantino Montefalco DOCG is produced exclusively with 100% Sagrantino grapes. The grapes are harvested relatively late, at the end of October, and the complex vinification process involves several phases during which constant temperature monitoring is essential. The long maceration of the skins lasts at least three weeks, followed by fermentation at temperatures below 30°C. The temperature then drops to a range between 25-28°C, during which maceration on the skins occurs. The next step involves a further drop in temperature, reaching around 20°C, allowing malolactic fermentation to naturally begin. Once malolactic fermentation is complete, the wine is aged in small French oak barrels, either barriques or tonneaux. The final aging period lasts a total of 36 months, as required by the production regulations, during which at least 12 months must be spent in small wood barrels—barriques or tonneaux. At least another 12 months in steel tanks, and then at least another 12 months in bottle.
