Ornello di Rocca di Frassinello is a red wine from the Tuscan Maremma that is born from a blend of Sangiovese, Syrah, Cabernet Sauvignon and Merlot. The grapes come from the vineyards of the Gavorrano estate, grown on medium-textured soils rich in skeleton and located at around 90 metres above sea level. The harvest takes place between the end of August and the second half of September, with separate harvesting of the varieties to respect their different ripeness. Winemaking takes place in temperature-controlled steel, followed by complete malolactic fermentation. The wine then ages in barriques, partly new, for about 12 months and completes its journey with a period of aging in the bottle before being put on the market.
Characteristics of this Tuscan wine
From an organoleptic point of view it has an intense ruby red colour. The olfactory profile is rich and characteristic, with balsamic notes and hints of roasted coffee, which are accompanied by shades of undergrowth and spices. In the mouth it is enveloping and harmonious, with soft and velvety tannins that contribute to a feeling of balance and roundness. The sip is full but smooth, with good persistence and a finish that recalls the spicy and slightly toasted notes perceived on the nose.
Recommended pairings with this red wine from Rocca di Frassinello
It is best expressed with structured meat dishes, such as roasts and red meats in general, but also with medium-aged cured meats and cheeses. It is a wine that lends itself to a tasty and not overly delicate cuisine, where its tannic softness and aromatic component can interact with rich preparations without being overpowering. The ideal service temperature is around 18 °C.
