This Prosecco Springo Green by Le Manzane comes from the San Michele Hills, located in the municipality of San Pietro di Feletto. The vineyards are located at an altitude of 200-250 meters above sea level, with a southeast exposure and clayey, iron-rich soils. After manual harvesting, the must undergoes cold static decantation and an initial fermentation with two rackings to eliminate the coarse lees. It then ages in stainless steel on the fine lees for five months, followed by fermentation in an autoclave and finally bottling. A second fermentation then takes place in the bottle, and the bottles are then placed in a room at a constant temperature of 10°C for two months. Before being released for sale, all bottles undergo manual riddling so that the yeast deposited on the bottom continuously adds structure to the wine until the wine is uncorked.
Characteristics of this Springo Green on the lees
It has a slightly hazy straw yellow color due to the presence of yeast, but with a fine and persistent perlage. The bouquet is delicate and evokes white-fleshed fruit and notes of bread crust. On the palate, it is fresh and savory, pleasantly creamy.
