A Champagne resulting from the skilful vinification of the master chef of the Comt de Montaigne cellar. The vinification involves the use of Rosé de Saignée grapes, made from 100% Pinot Noir, without adding wines from other previous vintages. The winemaking process, as per tradition, involves the use of the double fermentation method of the must at a controlled temperature and with the second fermentation in the bottle. Aging on the yeasts is more than three times that allowed by the 15-month disciplinary, this is to give the wines greater complexity. Aging ranges from 3 to 4 years. The finesse of the perlage of our Cuvées is given by this long aging, by a noble raw material and by a perfectly controlled, fresh and constant cellar temperature.

 

Characteristics of this Champagne Rosé

The organoleptic test shows a salmon color with a lively perlage rich in fine and persistent bubbles. The scent is rich in aromas of red fruit: raspberries and currants. By aging, the aromas evolve towards black fruit, such as blackberry. The taste is characterized by a corpulent, structured, vinous that remains fresh. Harmoniously combines character and length.

 

Recommended pairings while tasting this Rosé

This Champagne is characterized by a sensation of ripe red fruit, which lends itself well to combinations with risottos and more structured dishes with a full-bodied taste. The serving temperature is 8 ° C in a tall and tapered glass.
