This Cannonau red wine from the Sardinian Winery Giuseppe Sedilesu is made from pure Cannonau grapes grown in a small vineyard called Zi'Spanu, which has only 2,000 vines. The vineyard is located between the town and the village of Mamoiada and owes its name to its former owner. The grapes are harvested by hand at the end of September, followed by fermentation in steel at a temperature of 24-28°C and maceration for about 12 days. The final stage of maturation takes place in tonneau for 8 months, then in steel for another 4 months and finally in the bottle for another 12 months.
Characteristics of this Cannonau
It has a very bright ruby red colour with violet reflections. The bouquet has notes of ripe red fruit, spices and Mediterranean scrub. On the palate, it is striking for its strong tannins.
Recommended pairings with this Sardinian red wine
Particularly suitable with first and second courses based on red meat, game and mature cheeses. Serve at a temperature of 16-18°C.
