From the expert and conscientious vinification of 100% Nebbiolo grapes. The origin is the DOCG of Coste di Rose, a prestigious hill facing east in the municipality of Barolo , right across from the Bussia di Monforte. For winemaking, the freshly harvested grapes arrive at the cellar intact and are quickly pressed and delicately destemmed to extract only the most noble and aromatic fractions from the skins and outermost part of the berry. Fermentation, at a controlled temperature, takes place in thermo-conditioned tanks. Maceration on the skins lasts approximately eight days, during which periodic gentle pumping overs are performed, allowing the must to absorb all the trace elements present and delicately extract the coloring material. The wine is then racked into specially constructed glass-lined concrete vats, insulated with cork, to maintain a post-fermentation temperature of approximately 22°C for a long time. This allows malolactic fermentation to begin and complete spontaneously within a short time. The wine is first aged in small oak barrels, then blended in traditional large Slavonian oak barrels, which contribute to its harmonious and balanced character, enhancing the finesse of its bouquet. Before being released for sale, it completes its maturation in bottle for several months. Barolo reaches maturity 4 years after the harvest and the maturation plateau is between 4 and 20 years.

Upon tasting, the wine displays a deep garnet red color with ruby hues. The aroma is intense and persistent, with distinct notes of spice, cinnamon, absinthe, tobacco, and wild rose. The palate is full and elegant, with enveloping, soft tannins. The spicy and woody notes blend perfectly together, pleasingly.

A wine that is the ideal companion to traditional Langhe egg pasta dishes such as tajarin, meat ravioli, red meat dishes, boiled and braised meats, and game. It pairs well with sheep's and goat's cheeses and mature hard cheeses. The optimal serving temperature is 16°C.
