From the vinification of Catarratto grapes and small percentages of Vignoner expertly reared within the company. The origin of the vines falls on the estate of Castiglione di Sicilia north of Etna. Harvest takes place during the first ten days of September. Vinification involves cold maceration and subsequent static decantation. Fermentation takes place at a controlled temperature of 16 ° C for at least 20 days. Aging takes place in steel in contact with the yeasts for about 3 months.
