This Tuscan white wine is produced from a late harvest of Vermentino and Viognier grapes. The grapes are left to overripen on the vines for three weeks in order to increase their sugar concentration. The two grape varieties are harvested and processed separately: placed in closed presses, the grapes are macerated at a temperature of 7-8°C for 12 hours; followed by a longer pressing to extract the free-run juice, which is then decanted for 72 hours in temperature-controlled steel tanks. After decanting, the must is clearer and fermentation with selected yeasts can begin: this is a slow fermentation that lasts for three weeks at a temperature of around 15°C. The final stage of maturation takes place in steel tanks on the fine lees for three months.
Characteristics of this Tuscan Vermentino
This dry white wine has a straw yellow colour and aromas of broom, golden apple and honey. It is dry on the palate with a fruity finish.
Recommended pairings with this Tuscan white wine
Try it with steamed, fried or grilled fish. Also excellent with white meat dishes. Serve at a temperature of 13°C.
