Colore Bianco represents one of the rarest and most distinctive expressions of the Bibi Graetz project, born from a single historic vineyard located on the island of Giglio, a few meters from the sea. Here, Ansonica grows on poor, rocky soils of granite origin, shaped by wind, sun, and saltiness, which help define a unique and highly territorial profile. The vineyards, very old and raised in saplings, are grown in extreme conditions but ideal for obtaining grapes with a high aromatic concentration. The harvest is manual and selective, with perfectly ripe grapes harvested to preserve their integrity and expressive richness. Winemaking involves soft pressing of the bunches and fermentation at low temperatures, partly in stainless steel and partly in barriques, where the wine also continues its aging in contact with the yeasts. This approach allows you to combine precision, freshness and complexity, keeping the purity of the grape variety at the centre. The result is a white wine of great personality, characterized by a strong Mediterranean identity, in which marine savory, aromatic intensity and structure blend, with an elegant and deep profile that fully reflects the unique character of the territory of origin.

The Colore Bianco appears in the chalice with an intense straw yellow color, sometimes crossed by golden reflections that highlight its richness and maturity. Visual texture is important, an index of structure and concentration. It expresses itself with great complexity and depth to the sense of smell. Notes of ripe yellow-fleshed fruit such as peach, apricot and sweet citrus initially emerge, accompanied by Mediterranean and brackish nuances typical of the island territory. With oxygenation, the bouquet is enriched with delicate floral notes, aromatic herbs and light iodized and mineral notes that recall the sea. The aromatic profile is intense but always balanced, with a strong territorial identity. On the palate, the entrance is full, enveloping and structured, supported by a lively freshness that gives balance to the more mature component of the fruit. The flavor is very present and helps to give tension and depth to the sip. The texture is rich yet elegant, with a mouth center consistent with the nose and a broad, dynamic taste progression. The finish is long, persistent and markedly mineral, with fruity and saline returns that leave a feeling of great cleanliness and depth of taste.

This wine pairs excellently with structured and flavorful seafood dishes, such as baked fish, shellfish, mixed grills and preparations with light but aromatic sauces. It also expresses itself very well with first courses based on seafood, fish risottos and traditional Mediterranean fish soups. Also interesting is the combination with delicate white meats and fresh or medium-aged cheeses that are not too invasive. Serve at a temperature of 10-12°C.
