Bibi Graetz's Bollamatta is an original and unconventional rosé sparkling wine made from Sangiovese grapes and produced using the long Charmat method, designed to express a fresh and creative version of this Tuscan grape variety. Production starts from very old vineyards, between 50 and 80 years old, the same ones used for the company's most important wines. The grapes derive largely from the so-called “green harvest”, that is, from the thinning of the bunches, postponed to obtain the right sugar concentration useful for sparkling wine making. After harvesting, the grapes are destemmed and subjected to a soft pressing; the must remains in contact with the skins for about 4-5 hours to extract aromas and a light pink color. Alcoholic fermentation takes place in steel at a controlled temperature, while the foam intake takes place in an autoclave according to the Charmat method. In this case the process is longer than normal, reaching several months in contact with the yeasts, thus obtaining greater fineness and aromatic complexity.
Features of this Brut Rosé
From an organoleptic point of view, it has a pale pink color with coppery reflections and a fine, persistent perlage. On the nose it expresses intense and fragrant scents of small red fruits such as strawberry and raspberry, accompanied by light floral and herbaceous notes. In the mouth it is fresh, balanced and flowing, with good acidity and pleasant savouriness; the bubble is thin and creamy and accompanies a harmonious sip, with a surprisingly long and fruity finish.

As for the pairings, it is a very versatile wine, perfect both as an aperitif and with a full meal. It pairs well with fish appetizers, sushi and shellfish dishes, but also with vegetarian preparations, finger foods and fresh cheeses. Its freshness and bubbly make it ideal even with light fried foods or summer dishes. The recommended service temperature is quite low, around 6–8 °C, so as to enhance its liveliness, scents and the finesse of the perlage.
