The Ceci winery of Emilia produces this spumante Extra Dry Millesimato at 100%. After the pressing, there is the separation of the must from the marc after one hour. The fermentation is under temperature control and then the wine must rest up to December-January to clean itself from the impurities. It follows the maturation in French oak barrels and the re-fermentation occurs thanks to the natural sugars of the must.
Characteristics of this Spumante Extra Dry
It has a light straw yellow color with a fine and persistent perlage. The smell is net, elegant, with floral and citrons aromas. The taste is harmonic, creamy with pleasant fresh hints.

The spumante Nàni Otello Extra Dry of the Ceci winery is perfect with light cold cuts or with fish and crustacean also raw. It must be served at 7°C in a high and tapered wine glass.
