This white wine from the Piedmontese winery Bava is made from Sauvignon Blanc grapes grown in the Bricco della Pieve vineyard in Cocconato: here the soils are rich in chalk and limestone, with soft white marl that, as it breaks down in the sun, gives the earth a particularly light colour; These particular soils are usually reserved for red grape vineyards as they impart strength and elegance to the grapes, but surprisingly it has been discovered that here the white wines become savoury, particularly intense and fragrant. The vineyards are situated at 330 metres above sea level and face west. Fermentation is preceded by maceration of the crushed grapes at 10°C, followed by fermentation of the cold-clarified must. The wine then remains sur lie for 10 months in stainless steel.
Characteristics of this RELAIS BIANCO from Cantina Bava
It has a very delicate straw-yellow colour and a bouquet reminiscent of apricot, pineapple, rosewood, gooseberry and citrus fruits. On the palate, it is creamy, fresh and has a savoury quality typical of the terroir from which it originates.
Recommended pairings for this Piedmont Sauvignon
Excellent with aperitifs featuring cold cuts, steamed fish starters, fish-based first and main courses, and sushi. Also worth trying with fresh cheeses. Serve at a temperature of 10–12°C.
