Description du vin

The king of the wines for the denomination DOC Collio del Friuli, produced by the prestigious winery Villa Russiz. Sauvignon Bleu is produced with 100% Sauvignon, cultivated in vineyards with two main expositions: the ones with north-east orientation give a good aromaticity, while the ones with south east orientation, give the wine structure and richness. As the tradition of the winery requires, the grapes are harvested manually during the fresh hours of the morning. Then, the soft pressing of the entire grapes extracts the must that, in this case, begins a brand-new process. In fact, fermentation and aging of this Sauvignon Blanc are managed in oak barrels for a period that lasts 18 months. Then, the wine is assembled in steel, where it rests for other 4 months before the bottling. It matures for further 8 months in the bottle.

 

Features of “Sauvignon Bleu” produced by Villa Russiz

Straw yellow colour with dynamic green reflections. Its perfume opens with delicate hints of fruits like white peach and grapefruit, enriched by pleasant sensations of elder. The taste is fresh, elegant, mineral and balamce, with a good persistence.

 

Recommended food pairings while tasting Sauvignon Villa Russiz

Perfect with sushi, complex dishes with fat fishes like tuna, salmon or salted codfish. It has to be served at 12°C in a high, wide wine glass.
