Riesling “Schulz” is made from pure Riesling grapes from vineyards located in the Collio area, near Cormons. After the harvest, the grapes undergo a brief drying in a fruit bowl, followed by a soft pressing in a whole bunch. Fermentation takes place at a controlled temperature of approximately 19 °C with selected yeasts. The wine then ages in steel on the fine lees for several months until bottling, without carrying out malolactic fermentation, with the aim of preserving freshness and aromatic tension.
Characteristics of this Friulian wine
It has an intense, bright straw yellow color. On the nose it expresses a profile typical of Riesling, with notes of yellow fruit that, with evolution, tend towards the characteristic nuances of hydrocarbons. On the palate it is full, fresh and very persistent, supported by a lively acidity that lengthens its gustatory progression and enhances its overall finesse.
Recommended pairings with this white wine from Ronco del Gelso
It pairs well with dishes based on fish, shellfish and fresh cheeses, but also finds an excellent expression with first courses creamed in butter or light preparations where its acidity helps cleanse the palate and balance the fatness of the dish. Serve at a temperature of 10-12°C.
