Cabernet di Ronco del Gelso was born from a blend of Cabernet Franc and Carmenère, grape varieties often historically confused with each other in the vineyards of Friuli. The grapes come from vineyards raised in Guyot with a density of approximately 5,700 strains per hectare and a rather low yield per plant, in order to ensure qualitative concentration. Winemaking takes place in red with destemming and maceration of the grapes for approximately 15 days, followed by fermentation with selected yeasts at a controlled temperature. The refinement takes place for about a year in steel on the fine lees, a choice that aims to soften the more angular components of the grape variety and to preserve its drinkability and fineness without weighing down its tannic structure.

It has a bright and intense ruby red color. On the nose it expresses a clear and varietal aromatic profile, with notes of red and dark fruits, light herbaceous nuances typical of Cabernets and spicy accents. On the palate it is balanced and medium-bodied, with tannins present but not aggressive, a good softness and a structure that favours smoothness rather than power. The finish is harmonious, with a fresh and slightly vegetal closure that recalls the typicality of the grape variety.

It is a versatile wine that pairs well with cured meats, cheeses and traditional Friulian dishes. It expresses itself particularly well with grilled meats, burgers and simple but tasty preparations, where its medium structure and freshness can accompany the food without overpowering it. Serve at a temperature of 16-18°C.
