From a blend of Glera 85% and Pinot Noir 15% grapes, this Prosecco Rosé Brut Millesimato from Cantina Bosco del Merlo is born: while the Glera grape variety performs traditional white winemaking, Pinot Noir vinifies in red and with a lower yield per hectare to have greater color intensity and richness of aromas. The harvest also takes place at different times, in particular the harvesting of Pinot Noir is brought forward to preserve the fresh and fruity notes. After 2-3 days of maceration, the Pinot Noir ages in steel until assembled; the must obtained after soft pressing the Glera grapes ferments at low temperatures to enhance their fruity notes. Sparkling wine is carried out using the Charmat method in an autoclave.
